Is a single 7" G3X screen enough real estate / have capabilities to act as PFD with a split screen for engine monitoring?

Depends on how much you want to see vs. looking outside I guess. It’s adequate, but hardly what most folks are used to these days. I have a single screen (different manufacturer) about that size in my little jet, but also have an engine panel separately. I also use an iPad mini as a map on my leg in that plane.

for IFR, I’d not be comfortable with a single 7” screen…. Unless I had a full steam gauge panel as well!

My experience is yes. I've been flying the RV-10 that way (VFR) for a year and a half.

Yep. A single GDU470 would be a bit small for all and map function. But using say PFD/MFD/EIS on the GDU and having a separate tablet for your nav works super.
On a slight thread drift I'm surprised how much real estate is being lost on the bigger screens, sometimes repetitively...
