Has anyone determined the stability derivatives for any of the RV models or know of a source of RV flight dynamic modeling data?

No

I have not seen any as of yet. Most every RV is a one of a kind with different engine, props and W/B figures. The air frames are build for sport flying with only about 4* of dihead. in the wings. As with most home built airframe there are many that don't have their wings tail and mainframes straight or on line just perfect. So each may handle slightly different than the next. There is a section in the back of the construction manual that deal with the testing of dynamic stability after the aircraft is up and flying. You may wish to check that out as there are only a very few good test pilots that fly only a few models of the RV family of aircraft. don't know that this helps, but we try. Yours, R.E.A. One should remember that all but 3 of the RV designs are aerobatic.
Maneuverability and stability are somewhat at opposite ends of the scales.
The aerobatic RVs are a very good compromise.
