I thought a lot about this. As I am right-handed, I would actually prefer flying from the left seat for cross-country and IFR type flying. Having the right hand doing the fine motor skill tasks like writing notes, tuning radios, entering flight plans, etc. is preferable.
For aerobatic flying, I wanted that fine-motor skill on the stick. I felt like I could have a bit more precision with right hand on stick and left on the throttle.
Of course flying from either side works and you get used to it to the point of not really noticing. But, since I was building an RV-7 which for me was a sport plane first, I opted for the right seat for the aerobatic focus. Truth is, if money were no object, I would have built a symetrical panel and flown left or right based on that day's mission.
