Is there a nearby EAA Chapter at VDF? I ask because a lot of times Chapters have them for members use and I?m moving my RV-10 there in August so would like to join the nearest Chapter.
You might want to consider buying your own scales; They're not that expensive and you will use them a lot over the years: Not only for re-weighing after modifications, but for checking fuel quantity. I bought an Adam Equipment CPWplus 440 lb for $165, but I see similar models on Amazon for half the price.
I’d go to the local FBO at VDF or a surrounding airport for help before resorting to someone halfway across the country. Someone in the Tampa area has scales.

We had a nice set of scales. I believe the conditions for usage was to be a member & contribute a one time fee of $25. This gave you unlimited usage.
